Breakfast is the New Dinner

We’ve got nothing to eat you say? That means it’s breakfast for dinner tonight. It seems I’ve always got the fixings for breakfast lying around. It’s like survival food for me and one of my favorite dinners, simply because everything about breakfast food makes me happy. It’s comfort food. I also like that you can mix strange things with it, and it’s still appetizing, like putting salsa on your omelet, chocolate chips in your pancakes, and champagne in your orange juice. I can’t image chocolate chips in a steak…that’s just silly. If you ask me, breakfast is the new dinner.

Eggs

So I whip open the fridge and I find eggs…cheese…bacon…bread (yeah, that’s where we keep it because it’s Florida people)…hash browns…scratch the hash browns– I remember we have waffle mix.  And a waffler! That I’ve never used! We’ve had it for over a year, and I start to think about how I’ve actually never used a waffle iron before. I guess I’ve always been a pancake person ever since we got our electric griddle. But waffles seem like more fun, so I think how hard can it be?

With the instructions in hand, I begin to heat up the waffler and mix up my ingredients.

I pour in the batter and wait. Once the red light goes green, they’re done! I like fool-proof.

An almost perfect waffle develops. I had some time yet while my eggs scrambled, so I thought I’ll use up the rest of the batter and make two more waffles of equal beauty.

Make ‘Em Beg For More With This Dish

If you’re looking for a crowd-pleaser, a child-satisfier, a husband-filler or a big ole plate of comfort food, this is it! It’s easy to make and tastes like you know what you’re doin’ in the kitchen. (And it probably sealed the deal with my husband and I) Now I must admit, this is not a recipe I dreamed up, and I know many of you will be shaking your heads in agreement because you’ve made a version of Tater Tot Casserole before. And for those of you who haven’t, I know I know, casserole can mean difficult, timely and even mysterious, but like I said, this is easy and cheap to make. So without further ado, here’s what my mother passed down to me, and now I to you! (Oh goodness, that rhymed – Recipe at the end of this post)

Browning Meat
Brown 1 lb. of ground beef.

Casserole Ingredients
While you’re meat is cooking, lightly season with Onion Powder. Then snatch a couple cans of your favorite veges and throw them in a large casserole dish. I prefer to use cut green beans, but someone devoured them already, and it wasn’t me.

Peas and Corn
Empty your two cream of chicken cans and veges into a good size dish.

Beef and Tater Tots
Now the best part– add the tater tots (frozen please) and the browned meat when it’s ready.

Casserole Mixture
Mix it up good.

Cheese on Casserole
Now dump on a truck load of cheese! Or, add a cup to two cups.

White Wine
Now we wait.

Tater Tot Casserole
Mmmmmm. I like to throw some cheese on top and let it melt to give it that little bit of extra :) I hope you enjoy it as much as I do!

Tater Tot Casserole Recipe

1 lb. ground beef
2 cans of cream of chicken
1 can of corn (drained)
1 can of green beans (drained, can use peas, etc, whatever you like)
1 bag of tater tots (frozen)
2 cups of shredded cheddar cheese
onion powder (optional)

Preheat oven to 375 degrees. Brown the ground beef in a medium skillet and while doing so, lightly season with onion powder. While browning meat, combine in an oven safe casserole dish cream of chicken, corn, green beans (any veges that you’d like), frozen tater tots, and 1.5 cups shredded cheese. Mix well. Once meat is cooked through, mix that in as well. Cover (use tin foil if the dish doesn’t have a cover) and cook for 40 – 45 minutes.
